Hi
When providing evidence can it all be direct quotes from the text for each paragraph or do I have to use different evidence such as simile, metaphor, personification etc for each paragraph

Great question. You do not HAVE to provide language features to pass/do well unless you are answering a question that specifically asks you to analyse language features.
However it CAN add sophistication to your argument to identify some of these within the quotes you are using - for example you might unpack a quote and then talk about how it is also symbolism, or if it happens to include some imagery that positions the reader in a certain way, you might include this as part of your analysis.
So all in all, certainly not compulsory but recommended to include/unpack, even if only in places.
